Popovers

I made popovers for breakfast:


The ingredients are:
-1/2 cup all-purpose flour
-1/2 cup milk
-1 egg
-nonstick spray
-dash of salt

Directions:

1. Preheat the oven to 450 degrees.
2. Spray ramekins with nonstick spray.
3. Mix flour, milk, eggs, and salt just until smooth.
4. Pour batter in ramekins.

5. Bake for 20 minutes. Reduce heat to 350 degrees and bake for an additional 15-20 minutes.
6. Remove from ramekins and serve hot.
The inside of the popovers are hollow. They can be served with jelly or syrup.

Shrimp Cocktail

This is a quick and simple recipe. Ingredients:
-shrimp
-ketchup
-salsa

Directions:
1. Boil water. Add shrimp and cook for 5 minutes.
2. Shock shrimp in ice cold water to stop cooking process.
3. Make cocktail sauce by combining ketchup and salsa, to your liking.
4. Serve shrimp cocktail chilled.

Tuna Salad

Ingredients:
- can of solid white albacore
- mayonnaise
- sweet pickle relish
- 2 hard-boiled eggs, chopped
- salt
- pepper

Directions:

1. Add desired amount of mayonnaise, sweet pickle relish, and hard-boiled eggs to tuna.
2. Add salt and pepper taste.

Chef Salad

Here are the ingredients for the chef salad:
- 2 hard-boiled eggs
- grape tomatoes, halved
- ham, sliced into strips
- turkey, sliced into strips
- cheddar cheese, sliced into strips
- cucumber, sliced
- iceberg lettuce
- saltine crackers

Directions:

1. Put a bed of lettuce on the plate.
2. Place all the remaining ingredients on top of the lettuce.

Baked Ziti with Salad and baked Bread.

Here are the ingredients:
-2 lbs ground chuck
-1 small onion, diced
-1/2 green bell pepper, diced
-15 oz can of diced tomatoes
-15 oz can tomato sauce
-Hunts traditional Spaghetti Sauce
-8 oz. Ricotta Cheese
-3/4 lb. of Dry Ziti pasta
-12 oz of mozzarella cheese
-can of french bread
-iceberg lettuce
-grape tomatoes
-cucumber
-salad dressing
-2 tbsp. sugar
-Parmesan cheese
-Accent flavor enhancer (optional)
-salt
-black pepper


Directions:

1. Brown ground beef with onion, green bell pepper. Season beef with Accent, black pepper, and salt, to taste.
2. Drain browned beef. Add spaghetti sauce, canned tomatoes, tomato sauce, and sugar (cuts the tartness ad acidity of the tomatoes).
3. Boil noodles according to package directions.
4. Reserve two cups of the meat sauce. Add ricotta cheese to remaining meat and sauce mixture.
5. Mix cooked noodles into the ricotta sauce mixture.
6. Transfer noodles and sauce into an 13x9 inch baking dish.
7. Spoon the two cups of reserved sauce on top of the pasta mixture.

8. Top with mozzarella cheese. Bake in a 350 degree oven for 30 minutes. Also, add French bread into the oven.
9. Let baked ziti cool for 15 minutes before serving. Sprinkle with Parmesan cheese and serve.
10. Add grape tomatoes and cucumbers to lettuce. Toss with your favorite dressing.

Mac & Cheese

I made macaroni & cheese as a side dish. Here are the ingredients:- 1/2 lb. Elbow noodles
- 3 tbsp. all-purpose flour
- 3 tbsp. butter
- 1 c. evaporated milk
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 12 oz. mild cheddar cheese (shredded)

Directions:
1. Cook noodles according to package directions.
2. Melt butter in saucepan over medium heat. Add flour and whisk well. Cook for a couple of minutes; continuing to whisk.
3. Add milk, salt, and pepper; and whisk well.
4. Add 8 oz. of the cheese and stir until cheese is melted.

5. Add drained noodles to cheese sauce and mix until well coated.
6. Transfer the mac & cheese into a 8x8 square pan. Top with remaining cheese.
7. Bake at 350 degrees for 20 to 25 minutes of until cheese is melted.

Here's the complete meal. I had ham, mac & cheese, string beans, and cornbread.

Crab & Shrimp Boil

Tonight I made a crab & shrimp boil. Here are the ingredients:

- 4 lbs. Snow Crab Clusters
- 1 lb. Smoked Beef Sausage (cut into 2 inch pieces)
- 3/4 lb. of Shrimp
- 8 small ears of corn
- 8 red potatoes
- Zatarain's Crab Boil Seasoning
- 1 large onion (cut in half)
- French bread (sliced)

Directions:
1. In a large pot, bring 6 quarts of water to a boil. Add onion and crab boil seasoning to taste.
2. Start with potatoes. Boil for twenty minutes.
3. Add sausage and crabs clusters, bring back to a boil and cook for 10 to 15 minutes.
4. Add corn and cook an additional 5 to 8 minutes.
5. Add in shrimp, until they turn pink.

Beef Stew with Cornbread.

Yesterday, I made beef stew with carrots, green beans, corn, potatoes, sweet peas, and tomatoes; and cornbread for dinner.Ingredients;
4lb chuck roast
1 Medium Onion, diced
Sliced carrots
5 medium sized potatoes, diced
String beans (2 cans)
Diced tomatoes (28 ounce can)
Sweet peas (2 cans)
Corn (2 cans)
Conbread mix

Directions:
1. Cut roast into cubes, cover meat with water. Add a medium size diced onion, and add salt, pepper, and seasoning salt to taste. Bring to a boil and cook on medium heat for an hour.

2. Add potatoes, carrots, tomatoes, sweet peas, string beans, and corn. Cook for an additional half an hour.

3. Prepare corn bread muffin mix, according to the package directions.
